PEANUT FREE PEANUT BUTTER ICE CREAM

PEANUT FREE PEANUT BUTTER ICE CREAM
This is what I was told about this ice cream recipe~~
“This is the best and creamiest ice cream we have made in our ice cream machine yet. It is absolutely delicious. It tastes a lot like a very popular candy bar that is chocolate with peanut butter in it. Only, there is NO peanut butter in our recipe because my husband is allergic to peanuts. If there is no peanut allergy in your home, you could substitute Peanut Butter for the Sunbutter. You would never know the difference though, as sunbutter tastes so much like peanut butter. We had to go easy on the sugar because he is also diabetic.”
1/3 cup sunbutter
1/4 cup cocoa powder
1/3 cup sugar or splenda
1/2 cup brown sugar
8 large egg yolks
1 pinch salt
1 quart half-and-half
2 tsp vanilla Continue reading

STOP WEEPING MERINGUE
STOP WEEPING MERINGUE
The perfect meringue both looks and tastes amazing. To impress whoever will be devouring your meringue–even if it’s just you– you’ll want to prevent your meringue from weeping or drooping. To achieve a stiff and glossy meringue that lasts for three to four days, the key is to use eggs that are three to four days old and to follow whipping directions precisely. It may take a bit of effort, but the end result will be worth all your trouble.
1
Separate your eggs from your egg yolks and beat on medium speed until the whites become foamy and structured.
2
Add no more than 2 tbsps. of sugar for each egg white and continue beating without breaks. Do this until the egg whites are glossy and peak. Continue beating for your desired level of stiffness.
3
Store your meringue at room temperature in an inverted bowl if not used immediately. Do not place your meringue in the refrigerator since this results in sweating and weeping. Continue reading
