Follow our four-step guide to making fresh pasta sheets which you can use to dish up classic Italian favourites.

WHAT YOU NEED

To make your own pasta at home, you’ll need the following equipment:

a pasta machine for rolling out the pasta dough into sheets, and for making fettuccine
a fork for whisking the eggs
a rolling pin
clean tea towels to cover the fresh pasta while it’s drying

DEEP FRIED NOODLES
Cut the noodles into shorter lengths before frying. Using a kitchen shears, cut into lengths of approximately 3 to 4 inches.
Heat oil, approximately 3 inches in depth, in a wok or deep-fat fryer to 190° or until it is smoking. Vegetable oil or peanut oil can be used.
When oil is properly heated, place the noodles in the hot oil (the noodles should not be presoaked). Within a couple of seconds the noodles will puff up and be slightly browned. Use a slotted spoon to turn the noodles over in the hot oil and cook for a few seconds more, until second side is slightly browned. Continue reading→

Die bestandele hang maar af van hoeveel mense jy dit voor gaan voorberei. Ek het uie en sampioene gebraai en daarna room bygevoeg en dit stadig geprut tot ‘n redelike dik sous. Dan voeg jy gemaalde swart peper en pietersielie en jou biltong daarby en prut vir nog ‘n paar minute tot die geure mooi deur geprut is. Ek het sommer fettuccine pasta gekook tot gaar en die twee appart opgedis inplaas daarvan om dit deur te meng, maar jy kan dit saam meng as jy so voel.

Basiese pasta sous en Arrabiata
Neem vars of geblikte tamaties. Vars tamaties word in klein blokkies gesny, en met ‘n fyngekapte ui, en ‘n huisie of 3 knoffel, in ‘n pot gesit, en gekook tot gaar, en totdat die mengsel gereduseer en meer gekonsentreerd is (dit beteken die water in die bestanddele het weggekook, en laat ‘n dikkerige mengsel, waarvan die geure meer sterk smaak, agter). Meng hierby ‘n pakkie tamatiepasta, geur met sout en peper, en jy het jou basiese pastasous. Kan ook op pizza’s gebruik word vir die basis.

Gebruik geskeurde basil blare, en roer met die sous deur spaghetti, en bob’s your uncle! ‘n Raspertjie peccorino of parmesaankaas om dit diepte te gee, en jy’t ‘n wenner. Continue reading→

Resep kan gehalveer word.
360 g skulpie pasta (hier kan jy gebruik wat jy in die kas het )
1 eetlepel botter / olie om die uie in te braai
2 medium uie, in blokkies gekap
2 eetlepel tamatiepuree
2 groot tamaties, in blokkies gesny
2 blikkies tuna (180 g blikkie)
200 ml water (water waarin pasta gekook is) begin eers met 100 ml
1 eetlepel suurlemoensap
250 g pepergegeurde geprosesseerde kaas
4 eetlepels vars dill of ongeveer 2 eetlepels gedroogde dill
