BROODDEEG WIELE MET VULSEL
Ek sien uit om die broodwiele vannaand saam met ‘n braai te eet.
1 pak brooddeeg
knoffel, fyngekap
roosmaryn, fyngekap
Cheddar- en/of Mozzarellakaas, gerasper
olywe, ontpit
pietersielie, gekap
gesmelte margarien vir oorverf
Rol die brooddeeg uit op ‘n meelbestrooide oppervlak. Smeer die knoffel en roosmaryn op die deeg, (ek het pietersielie en origanum ook oorgesprinkel.) Strooi die gerasperde kaas laastens oor.
Rol die deeg op en sny in ongeveer 2 cm skywe. Pak die skywe in ‘n gesmeerde bakplaat en laat rys die deegwiele vir ongeveer 25 min. Continue reading→


CHEESY GARLIC FRENCH LOAF
1 long French loaf (cut thick slices diagonally but not right through to the bottom)
200 g butter (soft but not melted)
6-8 cloves of garlic finely grated (I use my microplaner)
400 ml finely grated Cheddar cheese
Sheet of tin foil lightly sprayed with Cook and Spray

GROOTMAAT ROOSTERKOEKE
5 kg wit broodmeel
15 ml sout
½ koppie suiker
2 blokkies nat suurdeeg
1½ liter lou warm water
200 ml goedkoop blok margarien
Plaas meel, sout en suiker in ‘n groot mengbak. Los suurdeeg op in die lou warm water. Smelt die margarien en voeg by meel. Meng die opgeloste gis water by met jou hande totdat ‘n deeg begin vorm. Sit mengbak met deeg sommer buite in die middagson vir so ‘n uur om te rys.
Smeer jou hande met margarien en maak balle, pak dit eenkant op ‘n skinbord wat met meel gesprinkel is. Laat dit weer rys terwyl jy jou kole regkry. Sprei die koeke uit op die rooster, braai op lae hitte en draai kort kort. Koeke word ligter as dit gaar is.
Ek het omtrent 230 koeke so groot soos my handpalm uit die 5 kg meel gemaak.

BILTONG AND CHEESE STUFFED MUSHROOMS
brown mushrooms
minced garlic
cottage cheese
finely cut biltong and biltong dust
Cheddar cheese
Guacamole
I don’t have exact quantities as used my own discretion to stuff the mushrooms. Layer ingredients in the mushrooms (I keep the center stalk), top with Cheddar cheese, drizzle with a dash of olive oil and braai until cheese had melted. Top with guacamole and biltong dust – serve.

KALLIE SE PAPTERT
½ koppie mieliemeel
½ koppie gerasperde Cheddar kaas
1 blikkie geroomde mielies
2 eiers
1 koppie melk
½ teelepel sout
1 teelepel bakpoeier
knypie rooipeper
Meng alles saam en bak in ‘n gesmeerde vuurvaste bak vir 1 uur op 180°C.
Genoeg vir 4 volwassenes.

CHEESY GARLIC BREAD
This is always a winner at braais or with any meal you enjoy with garlic bread.
250 gr cheddar cheese, coarsely grated
170 gr butter, at room temperature
3 scallions, finely chopped
4 large cloves garlic, chopped (or less if so desired)
kosher salt and freshly ground black pepper
1 loaf ciabatta bread, cut in half horizontally
Place an oven rack in the center of the oven. Preheat the oven to 200°C.
In a food processor, combine the cheese and butter. Process until the mixture is smooth. Add the scallions and garlic and pulse until combined. Season with salt and pepper, to taste. Spread the cheese mixture on the cut sides of the bread. Place on a baking sheet and bake for 10 to 12 minutes until golden.
Note: Recipe is enough for 12 ciabatta buns cut in half.

BUTTERNUT SQUASH BAKE
1 medium-large butternut squash
250 ml cream
1 packet dried brown onion soup
1 cup fresh breadcrumbs (optional)
Lightly grease a large, shallow ovenproof dish and pre-heat the oven to 190°C.
It’s up to you whether or not to peel the squash. The cooking is so long and slow that even if you leave it unpeeled, the skin gets to be soft enough to eat. If you plan to leave it unpeeled, though, do give it a thorough scrub. Slice the squash into 1cm thick rounds, scooping out the seeds. Slice each round in half. Continue reading→


MIELIETERT MET BROOD
4 snye wit brood
2 koppies melk
Week die brood in die melk en druk fyn.
4 eiers
2 blikkies roommielies
2 eetlepels margarien (gesmelt)
2 eetlepels suiker
Meng die laaste bestanddele goed saam, voeg die brood by en meng deur. Skep die beslag in ‘n oondvaste bak.
Bak in ‘n voorverhitte oond teen 180°C vir 1 uur.
