200 g spek (bacon) stukkies
1 groot ui, geskil en gekap
250 g knopie sampioene
sout en peper na smaak
2 eetlepels pietersielie (gedroogte is ook goed)
1 koppie rooiwyn
1 ½ koppie water
1 eetlepel gedroogde gemengde kruie
½ ui geskil en in skywe gesny, addisioneel

MUTTON POTJIEKOS
5 kg mutton
2 tablespoons olive oil
2 med onion
2 tablespoons Worcester sauce spice
1 teaspoon garlic salt
shake of black pepper
1 packet potjie vegetable mix
Brown onions.
Add spices and caramelise.
Add meat and brown all over.
Add 500 ml boiling water.
Cook for 10 mins then turn heat down low and simmer for an hour.
Serve with pap or Basmati rice.

Verhit olie en braai 5 groot uie tot deurskynend en sag.
Voeg 20 ml “Crushed” knoffel by en braai effens.
Verwyder uie.
Braai 3 kg volstruisnek porsies tot bruin.
Plaas uie terug.
Meng die volgende:
10 ml sout
25 ml Italian Herbs
5 ml fyn koljander
5.5 ml heel koljander
5 ml peper
Voeg by vleis en roer goed deur.

OXTAIL AND RED WINE POTJIE
A potjiekos is a traditional South African stew, slow cooked in a cast-iron pot over an open fire. This one combines the richness of oxtails and red wine to provide a delicious, hearty one-pot meal.
Serves: 8-10
500 g fresh oxtails (get your butcher to slice them into pieces in between the bones)
10 slices of bacon cut into 2.5cm pieces
½ cup flour, seasoned liberally with salt and pepper
