Kerala style chicken stew served with Malabar pathiri and coconut rice. This is one of the many varieties served in the South Part of India.
Gulab jamun this sweet dish is part of North India.
500 g rice, washed and soaked for 10 min
2 cup thick coconut milk
1 or 2 cups chicken stock, just to cook the rice
1 onion, chopped
salt for taste
small stick lemon grass
1 bay leaves
1 tsp of whole garam masala
1 tsp of Cumin seeds

PAMPOENTERT MET ROOM
3 koppies gaar fyn pampoen/butternut
1 koppie koekmeel
1 koppie suiker
1 koppie melk
1 koppie room
1 teelepel sout
1 teelepel bakpoeier
2 eiers
160 g botter (gesmelt)
Klits melk, eiers en suiker goed saam.
Meng meel, sout, bakpoeier en botter met pampoen.
Voeg eier mengsel by en meng room in.
Bak vir 45 minute teen 180°C

Ek maak glad nie die bak toe in die oond nie.
Ek het die pampoen tert in ‘n glasbak gebak, ‘n ronde KOEKIE drukker gevat en vorm in TERT gedruk en uitgelig met lepel, kan ook eierspaan gebruik.
Jy kan dit ook in ‘n muffin pannetjie bak.
BUTTERNUT SQUASH BAKE


BUTTERNUT SQUASH BAKE
1 medium-large butternut squash
250 ml cream
1 packet dried brown onion soup
1 cup fresh breadcrumbs (optional)
Lightly grease a large, shallow ovenproof dish and pre-heat the oven to 190°C.
It’s up to you whether or not to peel the squash. The cooking is so long and slow that even if you leave it unpeeled, the skin gets to be soft enough to eat. If you plan to leave it unpeeled, though, do give it a thorough scrub. Slice the squash into 1cm thick rounds, scooping out the seeds. Slice each round in half. Continue reading

SJOE SJOE MET BROOD EN KANEELSUIKER
2 sjoe sjoe’s, geskil en in blokkies gesny, opgekook tot sag, maar ferm
6 snye brood, beide kante gebotter en in repe gesny
kaneelsuiker
sout
½ koppie room
Pak ‘n laag brood onder in die bak. Skep helfte van sjoe sjoe blokkies oor. Sprinkel met kaneelsuiker, herhaal met brood, sjoe sjoe blokkies, kaneelsuiker, stip met botter. Laaste laag weer brood, sprinkel kaneelsuiker en giet room oor. Sit bak se deksel op en bak teen 180° C vir om en by ‘n halfuur.

500 gram sjoe sjoe, geskil en in blokkies gesny
100 gram suiker (125 ml)
2 ml sout
25 ml botter
2 snye witbrood, elk in 9 blokke gesny
3 stukke pypkaneel
125 ml kookwater
Verhit oond tot 190°C.

Ek kook net gewone pampoen in water tot dit sag is.
Giet van die water af.
Roer genoeg suiker en kaneel in volgens smaak.
Sny twee snye dik witbrood en botter ruim aan albei kante.
Sny die gebotterde snye in blokkies en roer by die pampoen in.
Die brood absorbeer die res van die water.

Rib eye pork steak with infused mashed potatoes and cheesy bacon brussels sprouts
PORK STEAKS:
Pan fried in olive oil with salt, pepper and smoked paprika.
MASHED POTATOES
8 baby potatoes boiled with skin on until cooked.
Roughly mash potatoes to a course consistency and add:
chopped black olives
sun dried tomatoes
spring onions with
½ cup of milk
1 tablespoon butter

½ cup flour
½ cup cornstarch
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon sugar

1 teaspoon each granulated garlic powder, oregano, Italian seasoning
pinch of cayenne pepper
1 egg
2/3 cup ice water
oil for frying

Al die bestanddele is na eie keuse en afhangende van hoeveel persone bedien word.
uie fyngesny
olie vir braai
water
aartappels in blokkies gesny
sout na smaak
200 – 250 g margarien
1 pakkie wit uiesoppoeier
Braai die uie in ‘n warm pan met bietjie olie tot effe bruin.
Voeg genoeg water by vir die hoeveelheid aartappels wat benodig word en voeg die aartappelblokkies en sout na smaak by die water en uiemengsel. Kook totdat die aartappels sag is en drieneer die water af. Continue reading

Kook gaar, meng 1 eetlepel botter in en gooi sout en peper na smaak in. Kan stukkend druk of heel hou.
SPINASIE
1 pak spinasie
2 aartappels
½ ui
Kook gaar, sit eetlepel botter in en sout en peper na smaak. Maak mengsel van sweet chillie sous en tartar sous. So 50 ml elk, en meng by spinasie. Hierdie is regtig lekker. Continue reading
