DARK GANACHE CHOCOLATES
250 g plain (dark) chocolate, 70% cocoa solids
200 g milk chocolate, 30% cocoa solids
200 ml whipping cream
100 g butter
2 tbsp instant espresso powder
For the coating:
200 g milk chocolate, 30% cocoa solids
150 g plain chocolate 70% cocoa solids
To decorate:
80 g confectioners icing sugar

MICROWAVE FUDGE WITH CONDENSED MILK
(I make this often):
125 g butter
2 cups caster sugar
Place together in large microwave bowl and micro for 2 minutes.
Stir well and then add 1 tin condensed milk and 2 T syrup.
Continue microwaving for a further 10-12 minutes – stirring every 2 minutes.
(Do not forget to stop and stir every 2 minutes.)
Once golden in colour – stir well and add 1 t vanilla essence. Pour into greased bowl and cut into squares once slightly cooled.

CORA SE KLAPPERYS
Vandag besluit om my klapperrys ‘n sjokolade baadjie te gee.
500 g versiersuiker
400 g klapper
1 blik kondensmelk
2.5 ml kremertart
5 ml vanilla
Kleursel
Meng alles saam, deel in 2, druk een deel in ‘n vierkantige bak en kleur die ander deel met voedselkleursel.
Druk dit dan bo-op die wit deel. Plaas in yskas tot koel en sny dan in blokkies.
Ek het sjokolade gesmelt en van die blokkies daarin gerol en op waxpapier laat staan.

165 g margarien( gebruik 180 g)
75 ml stroop
1 blik kondensmelk
1 kondensmelk blik kookmelk
1,2 kg suiker
140 g koekmeel(ongesif)
2 ml kremetart
5 ml vanielje essens
Smelt margarien en stroop saam in ‘n dikboomkastrol oor lae hitte.

Meng:
540 g versiersuiker
2 teelepels kremetart
2 blikkies kondensmelk
Voeg by en meng goed:
500 g klapper
Partykeer is klapper fyner as gewoonlik, as mengsel bietjie pap is voeg net nog klapper by.
Deel mengsel in 2 of 3 dele soos verkies en kleur met gewone of gel kleursel.
Druk in pan die verskillende lae plat en laat in yskas vir ‘n paar uur staan tot heeltemal styf.
Sny in blokkies.
Hierdie klapperys lyk nie net mooi nie maar die smaak is PERFEK!!!!

Ek maak vir die skoolverkope en baie ook daarby. Ekstra bietjie water maak fudge sagter en ek sit ‘n 1/3 milkybar by op die einde.
100 ml water
500 ml suiker
60 ml botter
30 ml stroop
1 blik kondensmelk
⅓ milky bar, opsioneel
Giet die water in ‘n kastrol, voeg die suiker by en verhit oor lae hitte, roer totdat die suiker heeltemal opgelos is.
Sodra die suikermengsel begin borreltjies maak (kook), roer die botter, stroop en kondensmelk by.
Kook tot sagtebal stadium (drup ‘n lepelvol mengsel in glas koue water, druppel moenie oplos nie dit moet solied tot onder sak).
Verwyder die pot van die warm plaat en roer jou stuk milkybar in of gebruik karamel blokkies, die rooi boksie, as jy nie milkybar wil byvoeg nie . Dit maak fudge sagter en gee ‘n romerige smaak .
Keer die fudge uit in ‘n diep pannetjie wat gespuit is met kleefwerende kossproei, sodra dit afkoel en amper gestol is sny in blokkies.
HOMEMADE SALTED CARAMEL CHOCOLATE
This is one of my favourite things to make over Easter and it’s so easy & delicious. All you need is
a can of condensed milk,
150g of butter,
3 tsp of dried Milo &
two big bars of 200g of dark chocolate.
I will post my Easter baskets over the weekend for full view.
Method: Empty condensed milk & butter. Turn the heat up and once the mixture becomes warm, turn the heat down half way. ALWAYS keep stirring (this is the best when using a plastic spatula). Keep stirring until the mixture starts thickening up. As this is on a low heat, it might feel like nothing is happening but you will clearly see the difference after. If you don’t stir constantly the mix will start burning on the bottom. Once it becomes thick, take a whisk and add the Milo. Continue reading
