Did you know avocados can be frozen?! You sure can
Whole, cut, diced or mashed avocados do not have as desirable of a result when frozen. Guacamole can often contain other ingredients that do not freeze well so we do not recommend freezing guacamole.

Mango seisoen….baie rypes…..sny in blokkies, plaas in plastiese sakkie, saam met ‘n paar eetlepels gekonsentreede mango sap, Halls of Ceres. Vries dit tot benodig word. Die vrugte bly net so vars, en is heerlik oor roomys, maar kan vir enige ander resep ook gebruik word. Die bietjie preserveermiddel in die vrugte sap hou die mango perfek!

HOW TO FREEZE EGGS

FREEZING SWEET POTATOES
Preparation – Choose medium to large sweet potatoes that have been cured for at least one week. Sort according to size and wash. Cook until almost tender in water, in steam, in a pressure cooker or in the oven. Let stand at room temperature until cool. Peel sweet potatoes, cut in halves, slice or mash.
If desired, to prevent darkening, dip whole sweet potatoes or slices for 5 seconds in a solution of 1/2 cup lemon juice to 1 quart water.
To keep mashed sweet potatoes from darkening, mix 2 tablespoons orange or lemon juice with each quart of mashed sweet potatoes.
Pack into containers, leaving 1/2-inch headspace. Seal and freeze.
Baked – Wash, trim and heat potatoes in oven at 350ºF without peeling until slightly soft. Cool, remove peel and wrap individually in aluminum foil. Place in polyethylene bags and freeze. Complete the baking in an oven at 350ºF immediately before serving, leaving the potatoes wrapped in foil.

WENK HOE OM VARS GROENTE TE VERWERK OM TE VRIES
Ons verwerk die groente en kook water op die stoof. Gooi net die groente daarin vir so 10 minute (die water moenie meer kook nie). Haal uit die water uit, laat bietjie afkoel en verpak. Die groente behou hul kleur ook as dit eers bietjie in kookwater gesit word.

Jy kan ook vars groente blansjeer. Spoel die groente goed af. Kook in ‘n kastrol water. Skakel die plaat af. Doop die groente daarin vir so 2 minute, skep uit laat water afloop en plaas in ‘n ander houer wat vol water en ysblokkies is, laat staan vir 1 minuut, en skep uit, dreineer en skep in vriessakkies, verseël en vries.

Wenke vir die vrieskas: Maak jou eie gevriesde aartappelskyfies
Cut 1 kg of potatoes into medium French fry shapes. Cook in simmering, salted water until half cooked. Drain thoroughly and place in a single layer on a sheet pan. Freeze until solid, then transfer to bags. When you’re ready to cook, toss potatoes with 2 tbsp of oil, place in a single layer on a sheet pan and bake at 210°C until nicely browned (about 15 – 20 min). Keep an eye on them, turning occasionally. Salt immediately when done, then serve.

PREPARATION
Rinse eggplants under cool water, using a vegetable brush if the vegetables are soiled. Young, tender eggplants are suitable for freezing with or without the peel. GEDROOGTE OF GEVRIESDE VARS ERTJIES
Pluk slegs jong vars ertjies, dop uit en verwyder die beskadigde pitte.
Blansjeer dit ‘n minuut lank in kookwater en dompel dit daarna dadeLik in yswater.
Dreineer die ertjies en bevries dit oop op ‘n bakplaat. Verpak die bevrore ertjies in vriessakkies GEDROOGTE ERTJIES
Laat die ertjies ryp word aan die plant, maar pluk dit voor die doppe droog is. Dop uit en blansjeer dit 2 min in kookwater of stoom. Dreineer die ertjies en versprei dit ongeveer 2cm dik op ‘n bakplaat.
Laat ertjies op’n sonnige plek of baie koel oond uitdroog. Roer gereeld om te voorkom dat die ertjies muf.
BEST WAY TO STORE CELERY
1 Place celery, unwashed, in a plastic bag and store it in the refrigerator. Trim the leaves from the stalk, but try to leave the stalk as whole as possible. The more you cut the stalk before using, the quicker it will decay.
2 To keep celery at its crunchiest, store it in a glass container filled with water in the refrigerator. Change the water every three days. It is best to use filtered water. You can lie the celery down in the water if you wish, or if your glass container has a tall shape you can stand the celery in the water on its ends.
3 To freeze celery, trim the leaves from the stalks. Blanch the celery in boiling water for three minutes. Drain and cool it. Place it in freezer bags and put in freezer. Celery can be stored in the freezer for 10 to 12 months.

Die geheim is dat die aartappels net so gevries gaargemaak moet word, sodra dit ontdooi word dit rubberig. My ma het haar aartappels net so met skil en al en rou in die vrieskas gesit.
As jy dit wil gebruik hou net onder koue water en die skil trek af.
As jy dit wil bak sit dit net so gevries in die oond en maak halfpad gaar en sny soos jy dit verkies en maak dan klaar gaar.
