

MIELIE BREAD ALA JENNIFER
Ingredients
3 cups fresh corn on the cob (not cooked) (I used sweet corn, as we don’t get white corn in the UK)
1 cup plain Flour
¾ cup mealie meel
2 tsp baking powder
½ tsp bicarbonate of soda
2 Tablespoons sugar
¾ tsp salt
½ cup sour cream (115 grams)
1/2 cup (120mls) milk.
2 x large eggs
1 tsp smoked paprika (optional) 80 grams unsalted butter melted.
Method
Preheat the oven to 350 deg F (170 C). butter and flour a cake pan and set aside.
Remove husk from corn and using a sharp knife, cut the kernels from the cob from top to bottom and place in a large bowl.
Using a food processor or blender, pulse the corn, as it is, until coarsely ground. Youu don’t want to puree the corn.
In a bowl, whisk together the flour, mealie meel, baking powder, bicarb of soda, sugar, smoked paprika and salt.
Whisk in, sour cream, milk and lightly beaten eggs until well combined.
Then add corn mixture and melted butter. Pour batter into prepared tin. Bake for about 40 minutes or until toothpick inserted comes out clean. Take out of oven and let it lie in the tin until cool. This will make it moister.
