HONEY GINGER APPLE SHREDDED PORK
1 kg boneless pork belly roast
1 onion, sliced
2 apples, cored, peeled and cut in four
2/3 cup beef stock (warm water)
½ cup Appletiser
1 tablespoon honey
2 tablespoons freshly grated ginger
½ teaspoon cinnamon
1 teaspoon salt
½ teaspoon smoked paprika
½ teaspoon pepper
2 garlic cloves, peeled and smashed
1 bay leaf
Pull out your crockpot or oven dish with a lid. Mix the honey and spices with the stock.
Add your stock and Appletiser, then onions, place the pork in the pot on the onions, then add the apples, garlic clove and bay leaf.
Cover.
Cook for 8-10 hours on low or 6-8 hours on high in the crockpot or 6 hours in the oven at 160ºC until the meat is very tender. Turned the meat every hour.
Take the pork out of the pot and use tongs or a fork to shred your pork. Put the shredded meat back in the pot and mix with all the lovely juices and pieces of apple in the pot.
