STICKY APRICOT SESAME CHICKEN WITH STEAMED MIXED VEGETABLES
1kg chicken fillet breasts
Cut into bite size pieces
Mix in a bowl…
1cup flour
Half cup corn starch
1egg white
2tbsp veg oil
Half cup cold water…you may need more for a loose batter..
1tbsp salt
1 Tspn baking powder
In a bowl and add chicken pieces and coat evenly..
Deep fry till golden brown..
Remove from oil.. dry on paper towel.
Set aside ….
For the sticky Apricot/honey sauce…
Mix in a bowl…
4 tbsp apricot jam or honey
Half cup soy sauce
1/4 cup Rice wine vinegar/apple cider
2tbsp corn starch
1tsp salt
4tbsp tomato sauce
Half cup water….
Set aside…
In a frying pan heat 2tsp sesame oil
Add 4cloves fine chopped garlic and fry for 30seconds
Add sauce mixture and stir till it starts to thicken..
Add chicken coating the pieces in sauce..
Remove from stove and serve with sprinkle of sesame seeds..
