


SIPHOKAZI’S OXTAIL WITH BALSAMIC
Last night I made oxtail and I realized that I don’t have red wine and I thought well I will just substitute it with balsamic vinegar.
1 kg oxtail
60 ml seasoned flour
30 ml oil
1 onion chopped
2 cloves garlic crushed
200 ml balsamic vinegar
250 ml beef stock
150 ml orange juice
1 can tomatoes
1 bay leaf
1 tsp chopped fresh rosemary
6 baby potatoes cleaned
2 large carrots peeled and sliced
1 handful green beans
Preheat the oven to 180°C.
Toss the meat in seasoned flour.
Heat the oil in a ovenproof pot and brown the meat.
Add the onion, garlic and cook for few minutes.
Add the vinegar, stock , orange juice, tomatoes and herbs.
Cover and cook in the oven for 1½ hours
Remove from oven, check the seasoning, add more stock if needed.
Add all the vegetables, cover the pot and return it to the oven.
Cook for 20-25 minutes or until vegetables are soft.
Serve with any starch of your choice.
