DHABA CHICKEN FRY
Ingredients,
Chicken 1 kg
onion 1/2 kg
tomato 1/2 kg
ginger garlic paste 2 tsp
salt 1-1/2 tsp
red chili powder 2 tsp
turmeric powder 1/2 tsp
garam masala powder 1 tbsp
green chili 3-4
black pepper 1 tsp
cumin roasted and crushed 1 tbsp
coriander roasted crushed 1 tbsp
ginger Julian cut for garnish as required
Directions,
1. Heat 3/4 cup oil in a wok, add 1/2 kg finely sliced onion, stir until onion changes its colour.
2. Add chicken and stir on high heat for 8-10 minutes.
3. Stir until you see light golden colour on chicken and onions. now add ginger garlic finely chopped and stir for 2-3 minutes on high heat. This is very important in this type of karhai because we want to cook onions nicely in it, other wise they will give raw flavor.
4. Now add salt, turmeric powder, red chili powder and stir for 2 minutes.
5. Add half tomatoes and stir on high heat until tomatoes completely vanish in karahi.
6. Add the remaining tomatoes and stir until these are vanish in karahi.
7. now add green chilies and stir for 1 minute. now on low heat with lid cook it until chicken is nicely tender.
8. Now add roasted crushed cumin and coriander and black pepper powder,garam masala powder. mix well.
9. garnish with Julian cut ginger and fresh coriander and with lid on slow heat leave it for 5 minutes.
serve with naan.
