ANCO’S TUNA CRAB AND CUCUMBER SALAD
1 x cucumber
1 x can of tuna
1 x can of Crab meat or Salmon
Mayonnaise
Baby leaves for garnish
“Caviar” for garnish
Mix Tuna, Crab and mayo together
Using a peeler, peel the cucumber into slices and place 6 or 7 slices on a piece of cling wrap, slightly overlapping each other.
Spoon some of the Tuna mixture onto the middle of the cucumber and, using the cling wrap, roll the tuna inside the cucumber and tie the ends to form a tight cylinder.
Place in the fridge for at least 15 minutes or until needed (Can be done ahead of the meal)
Garnish with more mayo, baby leaves and “Caviar”.
