DELICIOUSLY LIGHT AND FLUFFY SWISS ROLL
Thought i’d share this Swiss roll…
It’s quick, easy and always hits the spot. Ours was finished in less than 24 hours!
3 eggs
1 cup sugar
½ teaspoon vanilla essence
1 cup selfraising flour
½ teaspoon baking poowder
¼ cup boiling water
Pre-heat oven to 180ºC.
Whisk eggs, sugar and vanilla essence until light and fluffy and pale in colour.
Add flour, baking powder and water. Mix well.
I use spray and cook in my flat pan,
Layer the batter and bake for 8-10 minutes – depending on your oven
Then loosen the edges, cover the top with some sugar then a layer of wax wrap, use a wooden board to secure it, then flip it over, roll and unroll before adding my layer of jam and re rolling.
Sometimes, I add a tablespoon of cocoa to make a chocolate one and add coconut to the sprinkling of sugar.
And add cream and caramel to a thin layer of strawberry jam.
Deliciously light and fluffy

Someone asked me this morning for a swiss roll recipe so I looked on the blog….I must mention that I have never had success with making a swiss roll before. I found this recipe and tried it….came out very nice.
Going to try it next time with caramel.
