FLAKY ROTI
5 cups of cake flour
1 tablespoon salt
2 tablespoons cooking oil
½ teaspoon sugar
1 cup boiling water mixed with 1 cup of milk (from the fridge or cupboard) dont boil the milk
Oil in a saucer
Add flour, add salt, sugar and oil and mix well.
Add the water/milk mixture slowly to form a dough.
If liquid is less. prepare more of the boiled water and milk.
Knead dough really well.
This dough is a bit stiff.
Roll into long roll and cut or break off 15 pieces and make round discs and set aside.
Roll each 1 into an oval disc and brush with oil and dust with a little flour.
Now pleat this with the oil part up.
Then curl it like you would make a hair bun and set aside.
Prepare all, this way.
You can either freeze it like this in a container with wax wrap separating each or roll out in discs and separate with wax paper and freeze.
When rolling, oil your rolling a little and the dough and roll out.
Enjoyed best with tikkas and grills and vegetable curries.
