
Gideon our food chomma, posted a dinner that he made with Pork chops.
He said he used Mayo and Apricot Jam.
It looked so good that I had to try it out.
I used Chicken and I can highly recommend it, so here
is my recipe.
1 x whole chicken cut into pieces
1 x chicken stock cube
400 ml hot water
Robertson Chicken Spice
8 tbls Nola Mayonaise
8 tbls Smooth Apricot Jam
Oven 180
Method
Place chicken pieces in oven dish.
Dissolve stock cube in hot water and pour over chicken.
Sprinkle chicken with chicken spice.
Cover with tin foil.
Put in oven and bake unitl your chicken is done but not dry.
About 45 min to half an hour.
Drain all liquid off the chicken.
Mix Apricot Jam with Mayo until smooth.
Spoon over chicken pieces.
Cover with tin foil and put back in oven for half an hour.
Take tin foil off and turn grill on and grill for 10 minutes until it looks good.
Your chicken will be so soft it will fall from the bone.
Tip: Seeing that you are going to be using the oven for a long time, I wrapped sweet potatoes in tin foil and put it on a baking tray in the rack underneath the chicken. The sweet potatoes were ready the same time as the chicken.
