EASY 3-2-1 BISCUIT
300 g plain flour
200 g butter, softened (cooking marg is ok if you really must)
100 g sugar (I have used all sorts of sugar, all give different biscuits and work well. Golden brown granulated is my personal favourite)
A little water to bind
A pinch of cinnamon, some vanilla essence, a tsp of orange juice or some lemon zest are all optional extras – not all at once though!
Handy Hint
While still warm and soft sprinkle with a little sugar and it will stick. Alternatively, press in raisins or smarties to decorate. When cool they can be enjoyed plain or have fun decorating with icing and cake decorations.
METHOD
The easiest way to make these is to put all the ingredients into a food processor and zap in quick bursts until the mixture forms a blob but be careful not to whizz for too long.
Only add the water if the mixture is failing to stick, most of the time you can get away without it.If you are doing it by hand, sift the flour and sugar into a bowl, combine well.
Add the softened butter and mix add any of your optional extras and it should come together into one big sticky ball.
Once in a ball, wrap in cling film and leave in a fridge to rest for an hour. Longer is fine.|
You can divide and freeze half if you like.
When ready to make the biscuits, pop oven on medium hot, and prep a couple of trays with greased paper/tin foil, lightly oiled.
Roll out your dough on a cool floured surface 1/4 inch deep. Pick your favourite cutters and have fun.
Pop onto the tray and bake for approx 10 mins – keep watch and remove them when golden.
Leave to cool on a baking rack
