

GARLIC PARMESAN ROASTED SWEET- AND YELLOW POTATOES
Serves 8
1 extra large sweet potatoes
2 extra large yellow potatoes
2 large red onions
Sauce:
3 tablespoons olive oil
½ stick unsalted butter (125 ml)
5 minced garlic cloves or 2 heaped tbs bottled garlic
1½ teaspoon dried thyme
½ teaspoon dried rosemary
½ teaspoon dried parsley
2 x ⅓ cup freshly grated Parmesan
salt and freshly ground black pepper, to taste
Preheat your oven to 425°F (210°C).
Clean, peel and cut sweet and yellow potatoes as well as the onions in ¼” slices.
Sprinkle a smidgen of olive oil in the bottom of baking pan.
Pack one slice sweet and then yellow potato and lastly a slice of onion in rows in the pan.
Melt the butter in a glass container in the microwave for 10-15 seconds.
Add to and combine with the rest of the sauce ingredients.
Use a kitchen brush and generously paint the sauce over the rows of potato and onion.
Cover with aluminum foil and bake in preheated oven for 1 hour or until tender when pierced with a fork.
Remove foil and sprinkle the 2nd ⅓ cup of Parmesan on top.
Now return the baking pan to the oven and turn up the temperature to broil and bake for 10-15 minutes until crispy and golden brown.
Serve immediately and enjoy!
