

COETZEE SUNDAY BEER ROAST CHICKEN
Make a dry rub from
2 tablespoon smoked paprika
2 tablespoon cumin
1 tablespoon onion powder
½ tablespoon salt
½ tablespoon pepper
½ tablespoon lemon pepper
Rub chicken inside and out with olive oil and sprinkle dry rub all over. Put in braai or oven over medium heat with beer can inserted into cavity. Roast for 30 min and add potatoes. Roast a further 40 min, turning potatoes every 10 min. I sprinkle potatoes with olive oil, salt and pepper before adding them to the roasting tray.
