

PUMPKIN FRITTERS
1 cup pumpkin, cooked and pureed
1 cup flour
2 teaspoons baking powder
2 teaspoons caster sugar
1 egg
1/4 cup milk
pinch of salt
oil for deep frying
CARAMEL SAUCE
500 g butter
3 cups sugar
1/4 cup milk
Cook butter and sugar over low heat until light brown, pour in 1/4 cup of milk, slowly
Mix all the ingredients and mix until you have a smooth batter.
Heat oil and fry spoon for spoon until golden brown.
Remove from oil and drain on kitchen paper.
You can double or tripple this recipe with great success
