

SPANISH CHOPPED SALAD:
Dressing:
Blend together-
1 clove garlic
1 tablespoon red wine vinegar
3 tablespoons walnut pieces (optional)
1/2 teaspoon smoked paprika
2 teaspoons honey
2 tablespoons parsley
1/3 cup olive oil
1/2 teaspoon salt
Blend until smooth.
In large bowl, combine
1 chopped head romaine lettuce
2 cups baby spinach
1/4 red onion (sliced)
1/3 cup walnut pieces (optional)
1 cup halved cherry tomatoes
1 small finely diced apple
1 cup diced cucumber
Black and Green pitted olives added
Toss to combine then dress with vinaigrette.
Top with 1 cup shaved Manchego cheese. (I used Feta Cheese)
