GRANNY’S CHOCOLATE CAKE WITH CHOCOLATE GANACHE
Phase 1: Cake Sponge
80 g cacao powder
375 ml boiling water
750 ml cake flour
500 ml white sugar
30 ml baking powder
8 eggs separated
Preheat the Oven to 180˚C.
Whisk together the cacao powder and the boiling water. Let it cool down completely.
Sieve together the flour, sugar and baking powder in a big mixing bowl.
Separate the egg yolks from the whites.
Whisk the egg whites till stiff peaks.
Fold the cacao mixture and egg yolks into the dry mixture.
Fold in the egg whites, use a big spoon to do this, Scoop the mixture into 2 greased cake tins.
Tap the tins on the counter top to get rid of any bubbles in the cake batter.
Place into the oven for 30 minutes.
Let the cake sponges cool down completely.
Slice each sponge in half.
Pipe your chocolate ganache between the sponges, I also added a layer of caramel treat. It is up to you.
Phase 2: Chocolate Ganache
250 g dark chocolate chopped
100 ml cream
280 g white chocolate chopped
100 ml cream
Place a glass or stainless steel bowl over a pot of boiling water.
Add cream and chopped chocolate.
Stir till there are no lumps in the chocolate ganache
Let the ganache cool down till thick
Do the white and dark chocolate seperately
I like to make the white chocolate ganache a bit thicker because it needs to carry the weight of the sponge.
Nota: ek hou die twee sjokolades apart. Dieselfe hoeveelhede vir elke tipe sjokolade. Mens kan caramel treat (wat ek bietjie suurlemoensap en droë geroosterde kaneel inmeng) tussen die lae sit
