


DIANE’S MAYONNAISE CHOCOLATE CAKE
500 ml (2 cups) cake flour
3 eggs
125 ml (1/2 cup) cocoa
400 ml sugar
250 ml (1 cup) Cross & Blackwell mayonnaise
10 ml (2 teaspoon) baking powder
10 ml (2 teaspoon) bi-Carb of soda
5 ml (1 teaspoon) vanilla essence
330 ml luke warm water
Sift all dry ingredients together
Beat eggs, sugar and vanilla essence until creamy.
Add mayonnaise and mix
Add dry ingredients, gradually adding water, mix well, devide between 2 prepared tins.
Bake for 40 mins at 180 degree C
Icing:
170 g butter/margarine
3 cups sifted icing Ssugar
187 ml sifted cocoa (I used 80 ml)
2-3 teaspoons vanilla
1-2 tablespoon milk (I sometimes use Full Fat Cream Cheese)
Cream butter very well
Add all other ingredients and beat well.
