KEY LIME PIE.
Base
1 & a half cups digestive biscuits finely chopped up, mix with half a cup melted butter & 3 x tbsp sugar. Flatten into pie bowls & bake in oven at 180deg for 8-10mins.
Filling:
1 x tin condensed milk, half a cup lime juice – mix together until smooth & thick.
1 x cream whipped up – then fold into lime mixture.
Ensure biscuit base is properly cooled off & spoon into bowls.
Needs about an hour minimum to set in fridge before serving.
Can be decorated with mint leaves or lime zest grated over. From Swopping and cooking ideas
