KRISTIE’S RAINBOW CAKE
Ingredients for the cake:
1Kg Vanilla Cake Mix from Bakers Bin
9 Eggs
100ml Oil
450ml Water
5ml Vanilla Essence
6 Different Colours of Gel food colouring:
Violet/Purple
Blue
Yellow
Orange
Red
Leavy Green
Ingredients for the Royal White Icing:
6 Egg Whites
750g White Icing sugar
2 Teaspoons Glycerine
Method:
1. To start of mix in the eggs and water into the cake mix on high for 8 Minutes.
2. Add the oil and mix for 1 minute on high.
3. In six seperate bowls add equal parts of the cake mix into the bowls.
4. Add the food gel colouring to the six bowls and mix in the different colours with long sosatie sticks till it is well mixed.
5. In two small cake tins add the cake mixes and bake on 180 Degrees for 25-30minutes. Continue till all six colour cake mixes have been baked in the oven and cooled down.
6. Now begin with the icing, add the six egg whites to the mixing bowl and mix well till stiff peaks form of the egg whites.
7. Slowly add the icing sugar till a flowly consistency, you can add more icing sugar if you want.
8. Add the glycerine to the royal white icing and mix well.
9. Now begin with the violet/purple cake, put some royal white icing on and spread evenly till well covered.
10. Add the blue layer and put some royal white icing on.
11. Add the leavy green cake layer and also spread some royal white icing on.
12. Add the yellow layer and spread some royal white icing on.
13. Add the orange layer and also put some royal white icing on.
14. Add the red layer and spread some white royal icing on.
15. Cover the whole cake with the royal white icing and make the icing even on the whole cake.
16. Now you can enjoy and eat some cake! It is very moist and soft and the royal white icing give it a little bit of sweetness! Enjoy!!! Full of Goodness!!!
