ZESTY PINEAPPLE PUDDING
Serves 8 – 10
1kg Vanilla Muffin Mix
410gr Crushed Pineapple (with juice)
Zest of 1 Lemon
375ml Icing Sugar
60ml Lemon Juice
Preheat the oven to 180 Deg. Cel.
Prepare the muffin mix according to the packet instructions.
Mix the crushed pineapple & lemon juice through.
Pour into an ungreased 23 x 33cm baking dish.
Bake for about 1 hour or until cooked when tested with a skewer.
For the glaze, combine the icing sugar & lemon juice and pour over the pudding as soon as it comes out of the oven.
