
MEATBALL PORCUPINES
1 lb. ground beef
3/4 cup uncooked rice
1/2 cup milk
1 Tbsp. dried minced onion
1 tsp. salt
1/2 tsp. celery salt
1/4 tsp. garlic salt
1/8 tsp. black pepper
2 Tbsp. shortening
1 can (675 g) Spaghetti sauce (use your favorite flavor)
1 cup water
3 tsp. Worcestershire sauce
1. Mix together beef, rice, milk, minced onion and spices. Divide into 8 equal portions. Roll into balls. Refrigerate for about 30 minutes.
2. Melt shortening in large skillet. Carefully add meatballs. Brown on one side, carefully turn and brown on second side.
3. Add spaghetti sauce, water and Worcestershire to skillet. Stir. Bring to a boil. Reduce heat to a simmer and cook covered for 45 minutes. Stir occasionally being careful to not break meatballs.
