POTATO PORRING-PUDDING
Ingredients
1 kg of potatoes
1 liter of full cream milk
150 grams of butter
2 cups of sugar
1/2 a cup of cake flour
1 teaspoon of baking powder
3 tablespoons of Vanilla essence
10 eggs
5 tablespoons of custard powder
750g dried fruit
1/2 a teaspoon of ground cardamon ( Each to their own )
Boil potatoes until soft, drain and place in a bowl mash and add butter and 1 a cup of the milk till very smooth (No lumps) now fold in the sugar , flour, baking powder and vanilla essence and mix ..
Mix the custard powder with some milk. .In a separate bowl beat remaining milk , eggs and custard powder ( I used a hand blender for this) than add to potato mash . Mix until all is well combined.(Blender)
Pour the mixture in a greased deep oven tray and bake at 180 deg C , for about 1 hour . Take out of oven and allow to set….
Topping
750g packet dried fruit mix, cut to smaller bite size pieces and add to pot with a cup of water and a 1 ½ cup of sugar – boil for 20-25 minutes and allow to cool , pour or place stewed fruit over potato pudding and serve.
