EXTRA ORDINARY SWEET POTATOES
INGREDIENTS
Steam 20 small sweet potatoes with skin on.
Sauce: 125g butter
Fresh ginger to taste
2 cups sugar
1/2t caramel paste
Cream
METHOD
Melt butter, add ginger, paste & sugar. Stir and let mixture melt a bit in low heat. Add just enough cream to make a thick sauce, I added about 1/4 cup of cream. Add sweet potatoes & cook for 5 min on high heat. Dish out and if the sauce is to running leave the sauce to boil on high heat until thick.
