Makes approx 30
125g butter softened
1/2 cup of brown sugar
1/3 cup of caster sugar
1 egg
1 teaspoon of vanilla
1 1/2 cups of self raising flour
3/4 cup of caramel Choc chips
Cream together butter and sugars until light and fluffy. Whisk in egg and vanilla. Stir in flour and then fold through caramel Choc chips.
Place teaspoonfuls on greased baking trays or baking paper. Bake at 160 degrees Celsius fan forced for 12-15 min or until cooked. Cool on wire rack.
Store in an airtight container
