4 cups peanut oil for frying
1 (10 ounce) package washed fresh spinach
5 tb spoons sugar to taste
Pinch of salt and peper
Heat oil in deep-fryer to 375 º F (190º C). Place a large handful of fresh spinach in fryer basket, and submerge to cook for about thirty seconds. Drain spinach on paper towels, and repeat with remaining batches. Melt sugar in a pot pour over.
