IF YOUR CAKE BATTER CURDLES:
Just add a bit of flour
IF YOUR CAKE IS SPECKLED:
You’ve used granulated instead of caster sugar. Also, the mixture wasn’t mixed well enough, so the sugar hasn’t been properly dissolved.
IF YOUR CAKE IS TOO DRY:
You’ve used too much baking powder or left the cake in the oven too long.
IF YOUR MERINGUES HAVE WEPT IN THE OVEN:
You’ve added your sugar too quickly or added too much sugar all at once.
IF YOU DON’T WANT MARKS ON YOUR CAKE:
Cover the cake rack itself with a clean tea towel before inverting the cake on to it.
