QUEEN OF PUDDINGS
300 g fresh white breadcrumbs
60 ml (50g) castor sugar
grated rind of 1 lemon
600 ml cream
600 ml milk
100 g margarine or butter
8 egg yolks
For Topping
8 egg whites
300 ml (250g) castor sugar
120 ml strawberry or apricot jam
Lightly grease a 2,8 litre shallow ovenproof dish.
Put breadcrumbs, sugar and lemon rind into a bowl. Heat the cream, milk and margarine/butter in a saucepan until almost boiling. Pour over the breadcrumbs and stir well. Leave to stand for 10 minutes, then beat in egg yolks.
Pour mixture into prepared dish. Place in a preheated oven at 180 C until just set.
Make Meringue. Whisk egg whites until stiff, gradually add the sugar and continue to whisk until thick and glossy.
Spread jam over the breadcrumb mixture and top with meringue. Bake for 10-15 minutes until lightly browned.

Sit die regte hoeveelheid jam in want dit sal lekker oor die hele poeding smelt tydens die meringue proses in die oond. Geniet dit!
