1 Chicken cut up in portions (I used 8 large thighs and doubled the recipe)
100 ml cake flour
15 ml salt
2,5 ml black pepper
5 ml dried thyme
10 ml medium curry powder
Mix the dry ingredients and put it in a bowl that can seal.
Put 2 pieces of chicken in at a time and shake well so that the chicken is coated in the flour mixture. Place in a greased pyrex dish and continue until all pieces are coated.
1 med – large Onion chopped
1 large green pepper chopped (yellow or red or mix them for colour)
60ml seedless raisins
Mix onion, peppers and raisins and sprinkle over chicken
500 ml chicken stock (made mine with 1 1/2 chicken stock cubes)
100 ml tomato paste
30 gr butter melted
Mix together and pour over chicken
Bake at 180C for approx 60 – 90 minutes depending on the thickness of the portions
I took photographs of the various steps as I made this dish last night.
I can assure you, this is delicious and actually very easy and quick to prepare!
Srve with rice and mixed green salad
