ZESTY ORANGE FROSTING
1/2 cup butter, softened at room temperature
4 cups powdered sugar
2 teaspoons grated orange peel
1 1/2 teaspoon vanilla extract
In a mixing bowl, using a hand or stand mixer, cream the butter until light and fluffy.
Beat in the powdered sugar, orange peel and vanilla. Add enough orange juice one tablespoonful at a time to achieve frosting consistency.
Makes about 2 cups
