ORANGE AND ALMOND CAKE
2 oranges
6 eggs
250 g almond meal
1 teaspoons baking powder
250 g castor sugar
Cook the 2 oranges in water till soft (I cooked mine in the pressure cooker for 20 min).
Let the Oranges cool and then puree. This step can be done in advance.
Preheat oven to 160°C. Grease and line 22 cm Spring form cake tin with baking paper.
Beat the eggs and castor sugar together, stir in the orange puree followed by the almond meal and mix well.
Pour batter in prepared tin and bake for 1 – 1¼ hours or until top is brown and skewer comes out clean and dry.
Allow cake to cool in pan then dust it with icing sugar.
This is a very moist cake and really really nice
