Half cup Millet
1.5 cups boilling water – wash millet in cold water and simmer in boiling water till all water has been absorbed. It should be left to cool down completely.
Baby butternut (does not have to be peeled) – cut in blocks, drizzle with coconut oil and roast till soft and brown. Must cool down completely. (Olive oil can also be used.)
Broccoli – cut into small florets
Cherry tomatoes
Cucumber
Woolies Mixed Salad leaves (or any other)
Avocado – sliced or cubed
Dressing:
Half lemon’s juice
About third cup olive oil
Basil leaves cut fine
Use Braun and mix all.
Mix about a cup of Millet with dressing thoroughly. Now mix all ingredients.
Can sprinkle a handful of Almonds on top.
We had it with homemade bread and Angelfish Mix
