ORIENTAL FRIED NOODLE SALAD
½ chinese cabbage finely shredded
1 green onion chopped
100 g cashew nuts
100 g pack oriental fried noodles
¼ cup white vinegar
¼ cup caster sugar
1 tablespoon soy sauce
½ cup olive oil
Combine all dressing ingredients, stir over low heat till sugar dissolves, cool completely.
Mix cabbage onion and nuts.
Pour dressing over and just before serving mix the noodles in.
Shredded chicken or meat of choice can be added for a main meal.
