Preheat the oven to 220 degrees celcius – put the flour in a bowl and rub the butter into it until crumbly. Add baking powder, salt and cayenne pepper and mix lightly with your hands. Add butterilk, mix with a spoon until it just holds together. Tip onto a floured work surface. Fold the dough onto itself a few times while working the goats’ cheese and the basil into it. Add the other cheese. Cut the scones with a 5 cm cutter and place a small piece on the top of each scone. Bake for 10-15 minutes or until it has doubled in size!
