

DIABETES-FRIENDLY MALVA PUDDING

This low-carb variation uses alternative ingredients to keep blood sugar spikes to a minimum.
Ingredients for the Pudding:
2 large eggs
2 tablespoons granulated sweetener (e.g., Erythritol, Stevia, or Xylitol)
1 tablespoon sugar-free apricot jam
1 cup almond flour (ground almonds)
½ cup desiccated coconut
1 teaspoon bicarbonate of soda
2 tablespoons butter, melted
1 tablespoon white or brown vinegar
½ cup unsweetened almond milk or full-cream milk
Ingredients for the Sauce:
½ cup heavy cream
¼ cup butter
2 tablespoons granulated sweetener
¼ cup water
Preheat your oven to 180°C and grease an ovenproof dish.
In a mixing bowl, beat the eggs, sweetener, and jam together until creamy.
In a separate bowl, combine the almond flour, coconut, and bicarbonate of soda.
Mix the melted butter, vinegar, and milk together. Alternately add the dry mixture and the milk mixture to your beaten eggs, stirring well after each addition.
Pour the batter into your greased dish and bake for 25 to 30 minutes, or until the top is nicely browned and a skewer inserted comes out clean.
While the pudding is baking, combine all the sauce ingredients in a small saucepan over medium heat until melted and thoroughly combined. As soon as the pudding comes out of the oven, prick holes all over the top with a fork or skewer. Pour the warm sauce evenly over the pudding, letting it soak completely.
