CREAMY TUNA ROYALE
This has been a family favourite for years – as a kid I remember that the original recipe had chopped Pimento in instead of the tomato. We didn’t have Pimento – so tomatoes were the replacement. It is the only way we have ever made it.
2 tablespoons margarine/butter
finely chopped green pepper
1/2 a finely chopped onion
sliced canned or fresh mushrooms
1/4 cup of flour
salt and (lemon) pepper to taste
1/4 teaspoon of paprika
approx. 400ml of milk
1 or 2 cans of shredded tuna – water drained off
2 medium blanched tomatoes – chopped finely
1 tablespoon of Worcestershire sauce
1 teaspoon lemon juice
cooked fluffy rice
Melt butter and cook green peppers, onion and mushrooms until tender.
Stir in flour and seasoning and slowly add milk – keep stirring until smooth and thick.
Add tuna and tomatoes.
Simmer slowly for approx. 10 min.
Remove from heat and add lemon juice and Worcestershire.
Serve on Rice.
