

BLUE CHEESE, BACON AND AVOCADO BURGER
300 g pork mince
500 g chuck meat minced for patty
100 g of President blue cheese
Combine the two, add only salt and pepper, mix blue cheese into the patty mix. Form patties and let sit in fridge for an hour.
I make a sauce for the burger that contains creamy sweet mayonnaise, Dijon mustard and a few drops of saracha sauce for some heat.
Toppings I use entails, butter lettuce, Italian tomatoes sliced thinly, sweet and sour pickles, red onion and with the avocado I make a guacamole. The bacon I just fry nice and crispy.
Fry the patties in just a little olive oil and butter mix and don’t turn to much. I only turn it once, once the meat sauce leak out on the top of the patty, it gives it a nice char to the meat, once turned I add 30 day old mature cheddar and place lid on pan to melt cheese.
Buns I also char in the pan to give the burger a crispy taste.
