EASY CUCUMBER PICKLES
1 long cucumber
1 onion, sliced
250 ml apple cider vinegar
250 ml brine liquid
1 tablespoon peppercorns
1 tablespoon mustard seeds
1 teaspoon tumeric
½ teaspoon cayenne pepper
150 ml sugar
1 large bottle
Slice onion and cucumber thinly and pack into bottle. Put the rest of ingredients in a jug and mix until the sugar has dissolved. Pour liquid over onion/cucumber in bottle. Put lid on and leave in fridge for a few days before eating. Keep refrigerated.
Variations:
Add fresh chopped dill to taste.
Add fresh chopped garlic to taste.
Add julienne carrots.
My local butcher was kind enough to give me 1 litre of brine liquid – this is very salty therefore no extra salt was added.
