


MOUSSAKA MADE WITH SIRLOIN AND PORK CHEEKS
4 sirloin steaks (approx 500 g)
1 pork cheek (approx 450 g) skin cut off but keep the fat*
1 large onion
2 medium carrots
1 medium potato
All of the above minced with the coarse mincing screen.
I added a dried lamb spice mix (rosemary, sea salt, black peppercorns, roasted garlic, lemon rind, lemon oil) to cut through the very rich pork fat and give optimum flavour.
Panfry the minced mixture in little oil until it begins to go golden brown.
Make a Napolitana sauce (as per recipe but leave the cream out) and a medium thickness white sauce with grated cheddar in.
Brush 1 cm slices of brinjal with olive oil on both sides and grill both sides (I don’t do the salt thing with brinjals).
In an oven proof dish spread a thin layer of the fried minced meat over the bottom. Spread thinly with Napolitana sauce and layer the brinjal slices over it. Repeat once more and finish off with the cheese sauce. Sprinkle dried breadcrumbs and finely grated Parmesan over the top and bake in preheated oven at 175°C for 25 mins. The dried bread crumbs and Parmesan gives it a crunchy crust on top.
It’s ideal to serve with crusty bread like ciabatta to mop all the sauces up.
