LOW GI BUTTERMILK RUSKS
Makes 60 rusks
3 cups cake flour
2 cups oat bran
1 cup wholewheat pronutro
1 cup sugar
50 ml baking powder
125 ml canola oil
500 ml low fat buttermilk/maas/plain yogurt (I used buttermilk)
5 ml caramel essence
5 ml vanilla essence
2 small green apples (peeled and grated)
Sift all the dry ingredients together.
Mix oil, eggs and buttermilk well.
Add grated apples and essence to buttermilk mixture.
Add buttermilk mixture to the dry ingredients and mix well.
Spoon in a sprayed rusk pan.
Bake for 60 min at 170ºC
Remove from oven, cool down
Cut into pieces and dry rusks in oven at 80 ºC
1 rusk = 1 slice of bread
