MALVA PUDDING DESSERT PLATTER
Pudding:
1 cup flour
1 cup brown sugar
1 cup milk
1 tablespoon butter
1 tablespoon apricot jam
1 tablespoon bicarbonate of soda
1 tablespoon vinegar
1 egg
Sauce :
½ cup cream
1 cup milk
30 g butter
½ cup sugar
Cream the sugar, butter and jam together until smooth. Sift in flour and bicarbonate. Add the remaining ingredients and beat well. Butter a baking tray or ramekins. Pour the batter into the baking tray or ramekins until it’s half full. Cover with tin foil. Bake in a preheated oven at 180ºC for 30 – 35 minutes or until golden brown.
Meanwhile, add the sauce ingredients to a pot on the stove and bring it slowly to a boil remove from the heat. Pour the sauce immediately over the pudding as it is removed from the oven. Best served with vanilla custard.
