INSTANT COURGETTES
This is a method rather than a recipe.
Wash, dry and top and tail any number of courgettes (baby marrows or similar). Grate coarsely by hand or food processor. Liberally butter a large frying pan and add the grated courgettes.
Cook over medium heat until courgettes are heated completely. This should take no longer than a minute or two. Remove from the heat, season with salt and pepper and a dash of grated nutmeg. Stir in some cream to taste and return to the heat for a minute or two. Serve immediately.
