CHOCOLATE STUFFED VETKOEK
3 cups all purpose flour
2Tbsp sugar
2tsp yeast
1tsp baking powder
1 egg
150ml lukewarm water
50ml buttermilk/Amasi
50ml lukewarm milk
3Tbsp melted butter
Chocolate broken into pieces
Oil for deep frying
METHOD:
Place sugar , water and yeast in a jug and stir to combine set aside until foamy
In a separate jug add egg, buttermilk or Amasi and milk and whisk to combine
In a large bowl sift flour and baking powder and melted butter,mix to combine
Add the yeast mixture and the milk and buttermilk mixture and mix to form a dough
Turn out onto a lightly floured surface and knead for 5 minutes or until smooth
Place the dough in a lightly oiled clean bowl and cover with a clean cloth or cling wrap
Place on a warm place for 1 hour or until double in size
Knock down the air from the dough and roll out on a floured work surface to 2 cm thick
Cut into circles , place piece of chocolate in the center of each circle, fold and shape into balls
Place the balls on a lined baking tray
Cover with cloth and leave to rise for 10-15 minutes
Fill the saucepan or deep fryer with oil , place on medium heat and deep fry the balls in batches for 5 minutes or until golden and cooked
Drain on a paper towel and dust with icing sugar
Serve with hot chocolate on a cold day
