CHEESY POTATO CAKES
1 kg potatoes , peeled and chopped
pinch nutmeg
10 g chives , chopped
2 med eggs , beaten
180 g cheddar cheese , grated
salt and pepper
100 g bread crumbs
25 g butter
1 Tbsp sunflower , oil for frying
Boil the potatoes . Drain well … tip into a bowl and mash . Add the nutmeg , chives , eggs and cheese . Season with salt and peper . Mix everything together until combined . Divede the mixture into 8 portains and shape into cakes . Coat in breadcrumbs .Put on a plate and chill . Put butter and oil in a frying pan . Heat until the butter melts and when the foaming add half the cakes . Fry until golden then turn over and fry the other side .
