LEMON COCONUT CAKE
1 1/2 Cups self-raising flour
1 Cup castor sugar
1/2 Cup desiccated coconut
125g melted butter
2 eggs
1 Tbsp lemon zest
Mix all the ingredients together with a spoon until smooth.
Pour into cake tin(20cm)and bake for 40 minutes:
